HOW TO MAKE CLAMS
Seafood Ingredients for clams (for 2 people):
◾ 500 grams of large clams
◾ 3 large garlic cloves
◾ 50 ml olive oil (5 tablespoons)
◾ 50 ml white wine (5 tablespoons) (I used Fino de Jerez)
◾ 50 ml of water (5 tablespoons)
◾ 1 tablespoon small with wheat flour
◾ 1/2 small spoonful with sweet paprika (I used paprika from La Vera)
◾ Sal
◾ Parsley (optional)
Recipe for seafood clams (for two people):
1. The first thing will be to clean the clams well to remove all the sand possible. Put them in a pileup well covered with water and a couple of tablespoons of salt. Let them soak for 2 to 3 hours. If you don't have time, leave them at least half an hour. After this time we drained, rinsed under the tap and back to drain. If you see any broken clams better throw it away in case it is dead and spoil the rest of the dish.
2. In a large skillet (so that the clams do not crowd) put all the clams well drained and 50 ml of water. Put on medium heat and cover (if the top is glass better, so we can see when they open). We leave the fire until all the clams are opened shaking the frying pan so that they all receive the heat equally.
3. When the clams are open we pass them to a bowl and cover them with a damp cloth (not dripping) so that they do not dry out. Strain the broth that is left in the pan with a cloth wringer or very fine mesh gauze to remove the sand that may have released the clams. This is especially important if we could not have the clams soaking too long. We booked the broth.
4. Peel the garlic and cut into slices. In a clean skillet, put the oil and garlic on medium heat. Let the garlic take color little by little, it is important to be golden brown but without burning.
5. When the garlic is golden Remove the skillet from the fire, wait 10 seconds and add (in this order) first the flour and then on top of the paprika. Stir well, add the wine and put
